I understand that I can choose to stop sharing a published CoSpace, but I just want to check if I can delete a CoSpace within the “My CoSpaces” (to clean it up a bit) section without removing them from the public gallery?

Spaces that are shared will stay shared, even when the space in your “My CoSpaces” is deleted.
If you want to fully delist your space after you delete it from “My CoSpaces”, use the stop sharing - button in the CoSpace preview screen.
